Suzy’s Chili Fabuloso
This chili has been a family favorite for over 30 years. It is loaded with flavor and has just the right heat. Great weekend recipe. Put everything together and then let simmer for the afternoon. So good!
It started with Chili Primero from Creme de Colorado back in the early 90’s and has evolved into this scrumptious bowl of goodness . I hope you enjoy it as much as we do!
Organic Ingredients:
- 1 lb of bacon, cut into small pieces
- 3.5 lbs of ground beef
- 2 28 oz cans of tomatoes
- 2 15 oz cans of tomato sauce
- 1 6 oz can tomato paste
- 2 small serano peppers diced
- 2 7 oz cans green chilis
- 2 lg green bell peppers chopped
- 3 c diced onions
- 3 T Cumin
- 1 t. cayenne peppper
- 1 T ground Coriander
- 1 t. sweet paprika
- 1 t. oregano
- 2 T chili powder
- 3 cloves of garlic, minced
- 2 t. salt
- 1 t. pepper
- 2 30 oz chilli beans
- 1 15 oz black beans
- 1 c minced parslely
- 2 T lemon juice
Now what:
In large skillet, brown bacon; drain and set aside, reserving grease. In same skillet, brown ground beef. Put browned ground beef and bacon pieces in large stockpot. Stir in tomatoes with liquid, tomato sauce, tomato paste, and green chilies, Heat to simmering. In same skillet, saute onions, serrano peppers, bell peppers in 1/2 reserved bacon grease until transparent. Add to stockpot. Stir in , coriander, garlic, cumin, cayenne pepper, oregano, paprika, salt, pepper, chili powders, chili beans and black beans. Cook over low heat for 1 hour, stirring occasionally to prevent sticking. Simmer covered for 4 hours. Before serving, add parsley and lemon juice. Garnish each serving with sour cream, shredded cheese and corn chips.
