Roasted Vegetables with Bacon and Goat Cheese

These roasted vegetables are definitely next level! We eat this at least once a week in the winter. The bacon makes the veggies taste extra savory and the goat cheese adds a delicious creamy texture. So good!

Roasted Vegetables are a great way to get those needed daily servings. We typically go through the fridge and see what needs to be used, add some winter squash, potatoes and then something spicy.

My husband, Collin, has all the veggies chopped and ready to go. In this batch, we have mushrooms, jalepenos, butternut squash, carrots, potatoes, tomatoes, bell peppers, beets and parsnips. Let’s get cookin!

Now what:

Preheat oven to 400 degrees

Cut vegetables into 1 inch or so cubes and then add to large bowl. Cut the Anaheim peppers into 1/2 inch slices. Leave the seeds if you like a little heat. Add salt and pepper to the bowl and drizzle with the olive oil. Mix up well.

Line 2 baking sheets with parchment paper and then add vegetable mixture in a single layer. (This helps vegetables roast with less steam.) Add bacon slices or bacon ends on top of vegetables and disperse over the 2 pans.

Bake for 30 – 35 minutes, until vegetables are tender and turning golden brown.  Bacon will also be nice and crispy.

Remove bacon slices or ends and place on cutting board. Chop into bite size pieces.

Put vegetables in a large serving bowl and add goat cheese. Stir until vegetables are coated. Top with bacon pieces.

Once served, add a little more goat cheees on top!

This wlll easily serve 4 hungry adults.
We change the vegetables up almost every time we make it. Here are just a couple of things we also love:

 – Small cloves of whole garlic with skins.

 – Using sausage instead of bacon.

 – Cherry tomatoes, mushrooms and onions (Not a lot because it will cause the mixture to be too moist.

– Sprinkle fresh herbs on top and/or fresh green onions.

 – Leave out the bacon for a true Vegetarian Dish.

From start to finish, this meal takes about 1 hour. Every bite is differnt and delicious. This veggie dish is so versatile and is a go to meal here in our home. Love it!
