Potato and Swiss Chard with Serrano Chili Vinegar Recipe
Organic Ingredients:
- 5 medium Red Potatoes, sliced thinly
- 2 cups Cherry Tomatoes, sliced in half
- 2 1/2 Pounds Swiss Chard or Kale, coarsely chopped
- 1/2 pound Bacon, cut into small pieces
- 2 cloves Garlic, thinly sliced
- Sea Salt and Freshly Ground Black Pepper
- 1/4 c. Serrano Chili Vinegar, recipe to follow

Now What:
Tear Swiss Chard leaves from stalks, discard the stalks, and chop leaves.
Heat a large skillet over medium heat . Add the bacon and cook until golden brown. Remove bacon and drain off all but 2 Tablespoons of bacon fat. Add sliced potatoes and sear until golden, flip potatoes and cover with lid. Cook for 4 – 5 minutes or until soft. Remove potatoes. Add 1 Tablespoon of bacon fat and onions. Cook until soft. Add sliced garlic and cook for 1 minute. Add Swiss Chard and season with salt and pepper. Stir to coat leaves and cook until leaves are completely wilted. Add 1/4 cup of Serrano Chili Vinegar and cook for 2 minutes. Add bacon pieces and potatoes back in, cook until warmed through. Take off the heat and add tomatoes.
Serve with Serrano Chili Vinegar on the side.

Serrano Chili Vinegar:
10 Serrano Chiles
2 cups white wine vinegar
Sea Salt
Cut a small slit in each chili and add to a pint sized jar. Add vinegar and sea salt to jar. Shake well. Let sit for 2 days.
I love this recipe. It is perfect for late summer and early fall.
