Organic Roasted Delicate Squash Recipe
- 1-2 medium Delicate Squash, sliced 1/4″ thick (Not hard to slice.)
- Olive Oil
- Sea Salt and Freshly Ground Black Pepper
Wash and slice squash. No need to peel, skin is edible. ( Shocking, I know!) I also, don’t scoop out seeds. I found roasting the slices, with the seeds, to be super yummy.
Place cute flowers, I mean sliced squash on parchment lined cookie sheet. Drizzle with olive oil, sprinkle with sea salt and freshly ground pepper.
Bake at 400 degrees for 20 – 25 minutes.
I can’t tell you how amazing these are. So sweet and delicious! My favorite winter squash.
